Creamy Chicken and Rice Crockpot Dinner.

Wow,  Don't expect so many posts a day.  But I had to share, because my house smells amazing.  Truly amazing.  I cook because I love.  I cook and bake for those I love because to me, what is more loving than putting your all into a dish for another person.  So tonight, I decided to try my take on multiple Pinterest pins on Chicken and Rice crockpot meals.

I woke up this morning deteremined.  I was going to make something amazing.  In my humble opinion, waking up with a purpose is so much better than not.  Do not get me wrong.  There are days I just want to lounge in bed feeling sorry for myself.  Honestly there are days that I DO lay in bed.  I'm human, life gets the best of me sometimes, but not today.  I don't know if you've heard the quote, "Be the kind of woman that when your feet hit the floor each morning the devil says, "aw crap, She's up.'" 





That was me this morning.  That is me most mornings.  I was up before anyone in the house thinking about ways I could "get into trouble." I don't aim for jail.  Not my cup of tea, but just enough trouble to have people roll their eyes and shake their heads.  Yeah, that's fun.  I decided I was going to crockpot it today.

I opened my pantry and...oh crap...nothing.  Well not nothing...Crackers, noodles, cream of chicken so....wait a minute I have chicken in my freezer.  So I went to pinterest and looked up what I could make with Chicken and Cream of Chicken soup.  Other than the obvious put chicken in dish slather with soup, stick in oven.  Too boring for me.

So I found multiple pins with rice and chicken and soup.  Time to go Kroger-ing.  I should state that when I cook, I cook for a small army.  I have never been good at cooking for two.  So this dish will feed 4-6 people easily with seconds.  Before I left, I put my frozen chicken boobs (my kids think this is hilarious) and put them in the fridge to dethaw.

Kroger is amazing.  I love Kroger.  I love that Kroger is a block away from me.  I gathered up everything I needed and checked out.  My local Kroger has the nicest people that work there.  I always get a smile and a have a great day and usually a laugh.  With my newly purchased items I came home.  And began to create.  Then I thought well crap....people need to see what I'm putting into this amazing dish.  So I took a picture.






 I also began writing what amounts I was putting into the crockpot, so I could share this recipe.  This is what I put into the crockpot.


  • 1.5 lb Boneless Skinless Chicken Breast (You can add more...yeah...add more) cubed
  • 2 10.5oz. can's Cream of Chicken soup
  • 2 packets of Chicken Flavored Rice.  I used the bargain brand, because why not?!?!
  • 1 8 oz. package of Cream Cheese.
  • 1 16.9 oz. bottle of water (I live in Toledo 'nuff said)
  • 21 oz of milk. I used 2% because I live dangerously.
  • 1 bag of Colby Jack cheese
I sprayed the sides of my crockpot with cooking spray, to cut down on cleaning.  Next, I dumped all of the ingredients in to my pot (yes I realize the chicken is raw, it'll cook and be tender and amazing I promise), turned the knob to high and let it cook for an hour and a half.  After that I turned the knob to low.  It's been cooking for 7 hours.  I just turned it to warm.  It tastes amazing.   I mean look at it.

Comfort food at its best.  And here it is plated with steamed broccoli sprinkled with cheese.



I wish you could smell and taste it.  I don't cook with much salt, so salt to your taste.  I figure that you know your own tastes and can flavor it for yourself.  I made this for someone that does not like veggies.  I think that you could add carrots or celery and it would be a delicious addition, plus the texture of those veggies might bring an added dimension.
